粽(zong)(zong)(zong)(zong)(zong)(zong)屬于(yu)“籺(xie)(xie)”的(de)一(yi)種,籺(xie)(xie)是(shi)人們在(zai)逢(feng)年(nian)過(guo)節(jie)時用(yong)來拜(bai)神(shen)(shen)祭祖的(de)貢(gong)品,逢(feng)年(nian)過(guo)節(jie)做籺(xie)(xie)拜(bai)神(shen)(shen)祭祖是(shi)古老的(de)傳統(tong)習俗。籺(xie)(xie)有(you)很(hen)多(duo)品種,不(bu)同(tong)(tong)(tong)的(de)節(jie)日會做不(bu)同(tong)(tong)(tong)的(de)籺(xie)(xie),粽(zong)(zong)(zong)(zong)(zong)(zong)籺(xie)(xie)是(shi)端午(wu)節(jie)拜(bai)祭神(shen)(shen)靈祖先(xian)的(de)貢(gong)品。東漢末年(nian),以草木灰水(shui)(shui)浸泡黍米,因水(shui)(shui)中(zhong)含“堿(jian)”,用(yong)菰(gu)葉(xie)(xie)包黍米成四(si)角(jiao)(jiao)形(xing),煮(zhu)熟,即為廣(guang)東堿(jian)水(shui)(shui)粽(zong)(zong)(zong)(zong)(zong)(zong)。端午(wu)食粽(zong)(zong)(zong)(zong)(zong)(zong)是(shi)我國的(de)傳統(tong)習俗,包粽(zong)(zong)(zong)(zong)(zong)(zong)子主(zhu)要(yao)(yao)是(shi)用(yong)柊葉(xie)(xie)、箬(ruo)葉(xie)(xie)或菰(gu)蘆葉(xie)(xie),統(tong)稱粽(zong)(zong)(zong)(zong)(zong)(zong)葉(xie)(xie)。粽(zong)(zong)(zong)(zong)(zong)(zong)子的(de)傳統(tong)形(xing)式為三角(jiao)(jiao)形(xing),一(yi)般(ban)根據內瓤命名。粽(zong)(zong)(zong)(zong)(zong)(zong)子的(de)形(xing)狀多(duo),體現(xian)了不(bu)同(tong)(tong)(tong)地(di)域特色。粽(zong)(zong)(zong)(zong)(zong)(zong)子不(bu)僅形(xing)狀很(hen)多(duo),品種各(ge)異,由于(yu)中(zhong)國各(ge)地(di)風味(wei)(wei)不(bu)同(tong)(tong)(tong),主(zhu)要(yao)(yao)有(you)甜、咸兩(liang)(liang)種。甜味(wei)(wei)有(you)白水(shui)(shui)粽(zong)(zong)(zong)(zong)(zong)(zong)、赤豆(dou)(dou)粽(zong)(zong)(zong)(zong)(zong)(zong)、蠶(can)豆(dou)(dou)粽(zong)(zong)(zong)(zong)(zong)(zong)、棗子粽(zong)(zong)(zong)(zong)(zong)(zong)、玫(mei)瑰粽(zong)(zong)(zong)(zong)(zong)(zong)、瓜(gua)仁粽(zong)(zong)(zong)(zong)(zong)(zong)、豆(dou)(dou)沙豬(zhu)油(you)粽(zong)(zong)(zong)(zong)(zong)(zong)、棗泥豬(zhu)油(you)粽(zong)(zong)(zong)(zong)(zong)(zong)等(deng)。咸味(wei)(wei)有(you):豬(zhu)肉(rou)粽(zong)(zong)(zong)(zong)(zong)(zong)、火(huo)腿(tui)粽(zong)(zong)(zong)(zong)(zong)(zong)、香腸(chang)粽(zong)(zong)(zong)(zong)(zong)(zong)、蝦仁粽(zong)(zong)(zong)(zong)(zong)(zong)、肉(rou)丁粽(zong)(zong)(zong)(zong)(zong)(zong)等(deng),但以豬(zhu)肉(rou)粽(zong)(zong)(zong)(zong)(zong)(zong)較多(duo)。也有(you)南國風味(wei)(wei)的(de)柊葉(xie)(xie)蛋黃肉(rou)粽(zong)(zong)(zong)(zong)(zong)(zong)(海南)、什錦粽(zong)(zong)(zong)(zong)(zong)(zong)、豆(dou)(dou)蓉粽(zong)(zong)(zong)(zong)(zong)(zong)、冬菇等(deng);還有(you)一(yi)頭甜一(yi)頭咸、一(yi)粽(zong)(zong)(zong)(zong)(zong)(zong)兩(liang)(liang)味(wei)(wei)的(de)“雙(shuang)拼粽(zong)(zong)(zong)(zong)(zong)(zong)”。這些粽(zong)(zong)(zong)(zong)(zong)(zong)子均以佐粽(zong)(zong)(zong)(zong)(zong)(zong)的(de)不(bu)同(tong)(tong)(tong)味(wei)(wei)道各(ge)異。
