天(tian)津(jin)匯香(xiang)源食(shi)品有限(xian)公司于(yu)2012年成立,公司位于(yu)天(tian)津(jin)市東麗區躍(yue)進路西津(jin)赤路北健營(ying)工貿(mao)園,緊鄰外環和(he)天(tian)津(jin)濱海國際機場(chang),交(jiao)通便利。廠房占地1000多(duo)平方米,秉承著(zhu)誠信經(jing)營(ying)的(de)辦廠理念,傳(chuan)承和(he)發揚中國傳(chuan)統美食(shi)的(de)歷史重任,勇于(yu)創(chuang)新,在采用傳(chuan)統蒸(zheng)煮(zhu)的(de)前提(ti)下,選用上等(deng)肉料(liao),運用真空冷藏(zang)保(bao)鮮技術,保(bao)留了(le)入口(kou)香(xiang)甜,肥而不膩、爽滑可口(kou)的(de)美食(shi)體(ti)驗。
趙(zhao)成(cheng)林(lin)(lin)大師是天(tian)津飲食類非物質文化遺(yi)產(chan)“赤土扣(kou)肉”第三(san)代(dai)傳(chuan)(chuan)人。“赤土扣(kou)肉”的(de)(de)前身始源于清代(dai)御(yu)膳房(fang)的(de)(de)一道(dao)菜(cai),因用刀切成(cheng)萬字(zi)形(xing),所以(yi)叫“萬字(zi)扣(kou)肉”據說慈(ci)禧非常喜(xi)歡,清朝滅亡后(hou),宮(gong)廷御(yu)廚四散流(liu)落(luo)民(min)間,此前一直秘(mi)不外傳(chuan)(chuan)的(de)(de)宮(gong)廷佳肴也漸為(wei)百姓所知,趙(zhao)成(cheng)林(lin)(lin)大師把“萬字(zi)扣(kou)肉”進行改(gai)良,在(zai)烹(peng)飪(ren)中創造了十(shi)八道(dao)復雜(za)工藝,使之肥(fei)而不膩,味厚肉爛……“赤土扣(kou)肉”的(de)(de)名字(zi)從此流(liu)傳(chuan)(chuan)至今。
