天(tian)(tian)津匯香源食品有(you)限公司于(yu)2012年成(cheng)立,公司位于(yu)天(tian)(tian)津市東麗區躍進(jin)路西津赤路北健營(ying)工(gong)貿園,緊鄰(lin)外(wai)環和天(tian)(tian)津濱海(hai)國(guo)際(ji)機場,交(jiao)通便利。廠房占地1000多平方米,秉承(cheng)著誠(cheng)信經(jing)營(ying)的辦廠理念,傳(chuan)承(cheng)和發揚中(zhong)國(guo)傳(chuan)統美食的歷史重(zhong)任,勇于(yu)創新,在采用(yong)傳(chuan)統蒸(zheng)煮的前提下(xia),選用(yong)上(shang)等(deng)肉(rou)料,運(yun)用(yong)真空冷藏保(bao)鮮技術,保(bao)留了入口香甜,肥而不膩(ni)、爽滑(hua)可口的美食體驗。
趙(zhao)成林(lin)大師(shi)是天津飲食類(lei)非物質文化遺產(chan)“赤(chi)土(tu)(tu)扣(kou)肉”第三(san)代傳(chuan)人。“赤(chi)土(tu)(tu)扣(kou)肉”的(de)前身始(shi)源于清(qing)代御膳房的(de)一道(dao)菜,因用刀切(qie)成萬(wan)字(zi)形(xing),所以叫“萬(wan)字(zi)扣(kou)肉”據說(shuo)慈禧(xi)非常(chang)喜歡,清(qing)朝滅亡后,宮廷(ting)御廚四散流落民(min)間,此(ci)前一直秘不外(wai)傳(chuan)的(de)宮廷(ting)佳肴也漸(jian)為百姓所知,趙(zhao)成林(lin)大師(shi)把“萬(wan)字(zi)扣(kou)肉”進行改(gai)良,在烹飪中創(chuang)造了十八道(dao)復(fu)雜工藝,使(shi)之肥(fei)而不膩,味厚(hou)肉爛……“赤(chi)土(tu)(tu)扣(kou)肉”的(de)名字(zi)從此(ci)流傳(chuan)至(zhi)今(jin)。
