天津匯香源食品(pin)有限公司于2012年成立,公司位于天津市東麗(li)區躍(yue)進(jin)路西津赤路北(bei)健(jian)營(ying)工貿園,緊鄰外環(huan)和天津濱海國際機(ji)場,交通便(bian)利。廠房占地1000多平方米,秉承著誠信經(jing)營(ying)的(de)辦廠理念,傳承和發(fa)揚(yang)中國傳統美食的(de)歷(li)史(shi)重任(ren),勇于創新(xin),在采用傳統蒸(zheng)煮(zhu)的(de)前提(ti)下,選用上等肉料(liao),運用真(zhen)空冷藏保鮮技(ji)術(shu),保留了入口(kou)(kou)香甜(tian),肥(fei)而不(bu)膩、爽(shuang)滑可口(kou)(kou)的(de)美食體驗。
趙(zhao)成林大(da)師是(shi)天津飲食(shi)類非物(wu)質文化遺產“赤(chi)土扣(kou)(kou)肉(rou)(rou)”第三代傳人。“赤(chi)土扣(kou)(kou)肉(rou)(rou)”的前身始(shi)源于清代御膳(shan)房的一道菜,因用刀切(qie)成萬(wan)字(zi)形,所以叫“萬(wan)字(zi)扣(kou)(kou)肉(rou)(rou)”據說(shuo)慈禧非常喜歡,清朝滅亡后,宮(gong)廷(ting)御廚(chu)四(si)散流落民間,此前一直秘不外傳的宮(gong)廷(ting)佳肴也漸為百姓(xing)所知,趙(zhao)成林大(da)師把“萬(wan)字(zi)扣(kou)(kou)肉(rou)(rou)”進(jin)行改良(liang),在烹飪中創(chuang)造了十八道復雜(za)工藝,使之(zhi)肥(fei)而(er)不膩,味厚肉(rou)(rou)爛(lan)……“赤(chi)土扣(kou)(kou)肉(rou)(rou)”的名字(zi)從此流傳至今。
